Set Menus

Garden Menu or The Full Menu  

€45 or €65

available every evening except Friday Friday is a more extensive tasting menu experience full of lots of tasty bites where diners arrive at the same time, and full wine and soft drinks pairing is available and every course is presented by the chefs. 

The menu below is an example of the garden menu, the full menu consists of more snacks and courses. You can choose on the night.

Le Nausannieres bread, juniper smoked butter, valerian

 

Garden course

Broad bean & fresh pea, shaved raw fennel, wild fennel oil, lemon verbena, whipped goats curd

Chilled cucumber and tarragon soup

Main course​

Your choice of

Confit chicken – River Trout – Chickpea & Leek 

Served with a lemon balm chicken butter sauce, roast oyster mushroom, bbq lettuce, einkorn

Blackcurrant leaf parfait

Strawberries, honeysuckle

Walnut and barley sablé, brown sugar cream, orange, thyme flower

Children are invited to join the four-course menu at full size or as a smaller portion at €35 
 

Signature Tasting Menu 

€80 per person

Friday Evenings only 

This is my absolute favourite menu to prepare, with full passion and enthusiasm. It's where I showcase the full explosion of wild flavours, blended with gorgeous local produce, where each bite and course is presented in a more intimate setting, alongside the option to have a carefully curated wine pairing or soft drinks pairing made using the ferments, elixirs and concoctions that we make in house. You will learn lots about wild foods and the evening is more of a tailored experience.

Pine yogurt sorbet

lemon verbena, cold-pressed olive oil 

Crispy artemisia, walnut, pickled thyme flower

Pine smoked beetroot, cucumber, salad burnet, marjoram flower

Cheese sable, Ferme des Genévriers fresh sheeps cheese, wild oregano, pickled rose

Cured brill, green chilli, sea herbs

Warm bread & cultured Périgord butter · summer herbs

Broad bean & fresh pea

shaved raw fennel, wild fennel oil, lemon verbena, whipped goat's curd, nasturtium

Sandre, girolles, Bergerac white butter sauce, nasturtium, crispy tarragon

Pork collar and loin cooked over the fire

lightly fermented fennel & Monbazillac sauce, grilled fennel, bbq hedge mustard

or

Roast aubergine

grilled fennel, fermented fennel sauce, wild summer herbs, hazelnut crumb, shaved Ossau-Iraty

Cucumber jelly with elderflower and apple marigold 

Ground ivy granita

Périgord cherries & plums, crystallised hedgerow flowers — honeysuckle, clover, rose, meadowsweet

Nettle & verbena pâte de fruit

Childrens Menu 

€25 per child

Pasta served with a choice of: 

Bolognaise

slow-cooked beef ragù, cheese, or homemade tomato sauce  or pesto, cheese

Butter / olive oil,  cheese

Served alongside:

Bread and butter 

A bowl of seasonal vegetable crudités

Children can also join the full four-course at €45 or opt for a reduced portion size of the four course which is available at €35.

 

On Friday, there is only one menu available which is the tasting menu, for adults and children. We do not offer a separate children's menu on Friday evenings,
